whimsical wednesday

It seems mother nature is giving us Spring today … yeah … the sun is shining, blue skies, and temperature close to 60 degrees. I love it.
Last night was much fun. The girls [they are all beautiful young women] look absolutely amazing in their bridesmaid dresses. The dreamy wedding is coming together so perfectly. Everyone working together on the plans has [and will continue to be] a wonderful experience … building memories for all. I so love that.
I did it again. Taylor keeps reminding me [insisting really] that if I am going to share recipes, I take photos when I cook. I think the problem, for me, is that I kinda make things up as I go along. I’ve hardly ever followed a recipe [which is precisely why I’ll never be a baker]. So, much of the time, my initial idea for a meal is changed by the final steps. This was so good, I must share. It was time to clean out the fridg again.
I started with 4 veggie burgers – browned them [in a large pot] in olive oil and garlic – then cut them into little pieces and continued sautéing, while adding 2 tomatoes [diced]. Sautéed for a bit and then added 2 cups of water, 2 cups of French cut green beans [I used frozen], 2 cups of broccoli slaw [those pre-chopped bags – this one had broccoli, red cabbage and carrots], 2 cups of pre-cooked chick peas, and one package of my fav – Knorrs rice – I did remember to photograph that package … with the spices in the Mexican rice, I didn’t need much more than a pinch of salt and pepper.

Stir while bringing to a boil … low boil for about 10 minutes – then simmer for 30 more … its like a stew kind of thing – I served it hot on a bed of mixed greens. Yummy yummy
We watched a netflix documentary today about wolverines. They are so adorable, interesting, the landscape of Alaska - beautiful … the documentary is worth the watch.
I hope everyone is having a great week … I surely am … I think I may take tonight off to relax and read …
